THE Spaghettini are a classic shape of Italian tradition (2.8 mm in diameter) and require a special blend of semolina, made from durum wheat grown in the sunny and windy hills of southern Italy.
We obtain the "Spaghettoni" through a mold made of a special bronze alloy with funnel-shaped holes that give the dough, while it takes its shape, a delicate pressure.
Slow drying at low temperatures for approximately 40 hours allows for perfect osmosis between carbohydrates and proteins. This ensures balanced cooking from the center to the surface, a homogeneous blend with your sauces, and a deliciously soft texture*. Wine Spectator, Pasta Perfect, 2000.
