SPAGHETTONI by Benedetto Cavalieri
THE “Spaghettoni” are a classic shape of the Italian tradition (2.8 mm in diameter) and require a special mixture of semolina, from durum wheat grown in the sunny and windy hills of southern Italy.
We obtain the “Spaghettoni” through a special bronze alloy mold with funnel-shaped holes that give the dough, while it takes its shape, a delicate pressure.
The drying process, lasting around 40 hours at low temperature, ensures perfect osmosis between carbohydrates and proteins. You will thus obtain balanced cooking from the heart to the surface, a “delicious chewiness” and a perfect blend with your sauces…..
