TRUFFLE AND REGGIANO PARMIGIANO BURGER
For your homemade truffle mayonnaise you will:
Ingredients:
1 egg
1 teaspoon of dijon mustard
-50 ml of extra virgin oil
1 tablespoon truffle olive oil
1/2 teaspoon of truffle paste
Salt and pepper to taste
Instructions:
1. In a bowl, mix the egg and mustard until the mixture is smooth.
2. While whisking constantly, slowly add the extra virgin olive oil in a stream until the mayonnaise begins to thicken.
3. Add the extra virgin truffle olive oil and mix well.
4. Season with salt and pepper to taste.
5. Stir in the truffle paste to add flavor.
For the beef meatballs with reggiano parmigiano cheese you will need:
Ingredients:
500g semi-lean ground beef
1/2 cup grated Reggiano Parmigiano
1 clove of garlic, chopped
1 tablespoon chopped fresh parsley
Salt and pepper to taste
1 egg
Instructions:
1. In a large bowl, combine the ground beef, grated Reggiano Parmigiano, chopped garlic, fresh parsley, salt, pepper and egg.
2. Knead the mixture until all the ingredients are well incorporated.
3. Shape meatballs into desired size using your hands.
Once the meatballs are cooked, serve them in a lightly toasted hamburger bun, arugula and slices of truffles!
