TRUFFLE AND REGGIANO PARMIGIANO BURGER
For your homemade truffle mayonnaise you will need:
Ingredients:
- 1 egg
- 1 teaspoon of dijon mustard
- -50 ml of extra virgin olive oil
- 1 tablespoon truffle olive oil
- 1/2 teaspoon of truffle paste
- Salt and pepper to taste
Instructions:
1. In a bowl, mix the egg and mustard until the mixture is smooth.
2. While whisking constantly, slowly add the extra virgin olive oil in a thin stream until the mayonnaise begins to thicken.
3. Add the truffle extra virgin olive oil and mix well.
4. Season with salt and pepper to taste.
5. Stir in truffle paste to add flavor.
For the beef meatballs with reggiano parmigiano cheese you will need:
Ingredients:
- 500g of semi-lean ground beef
- 1/2 cup grated Reggiano Parmigiano
- 1 clove of garlic, chopped
- 1 tablespoon chopped fresh parsley
- Salt and pepper to taste
- 1 egg
Instructions:
1. In a large bowl, mix together ground beef, grated Parmigiano Reggiano, minced garlic, fresh parsley, salt, pepper and egg.
2. Knead the mixture until all the ingredients are well incorporated.
3. Shape into balls of desired size using your hands.
Once the meatballs are cooked, serve them in a lightly toasted hamburger bun, with arugula and truffle slices!
