CAPELLINI D’ANGELO by Benedetto Cavalieri
Capellini, also known as "angel hair", is a variety of thin, long pasta originating from Italy. Their history goes back several centuries and is closely linked to the evolution of Italian cuisine.
Since 1800, the Cavalieri family has been engaged in the cultivation of wheat in specially chosen fields in the heart of Puglia.
Since 2005, Pastificio Benedetto Cavalieri has been named a Learning Center of the Slow Food University of Gastronomic Sciences of Pollenzo (Piedmont). The week-long thematic seminars on pasta making are attended by students from five continents.
